  • The Useful Plant Company is dedicated to teaching sustainable, safe, and ethical foraging through all our walks and workshops. By foraging thoughtfully, we can ensure that our wilderness remains abundant, resilient, and long-lasting.

We share our Foraging Principles so that everyone can learn a lasting respect for Scotland’s ecosystems; one that balances knowledge with care.

    1. Leave No Trace

Harvest with care and humility. Take only small amounts from the wild, concealing any cut stems or foliage and backfilling any small holes left from root gathering.

A well-harvested site should look untouched to anyone passing by.

    2. Harvest Only What You Can Identify

Know each plant before you pick it. The plant kingdom is rich and diverse, but not all herbs are safe: some can be deadly when mistaken for their lookalikes. Therefore ALWAYS trace each stem to its base before harvesting, and learn to recognise plants by sight, scent, touch, taste and habitat.

A simple rule to remember: don’t munch on a hunch.

    3. Harvest at the Right Time

Harvest at the correct time of day: For most barks, stems and leaves, harvest in the morning when the sap is rising and the plant is most active. Flowers should be harvested shortly after opening, noting that some may only open in the evening.

Harvest seasonally: The most effective medicine can be produced by knowing when to forage each part of the plant:

      Roots: Autumn/early spring

Leaf and stem: Spring/summer: fresh tips before flowering

Buds & flowers: Spring/Summer/Autumn: before they are fully developed

Bark: Autumn: prune small branches for bark

Fruits, berries, hips & haws: Summer/Autumn/Winter: collect when nearly ripe

Seeds: Spring/Summer/Autumn: gathered when perfectly ripe

    4. Permission and the Law

In Scotland, the right to roam allows for responsible access and the collection of wild fruits, nuts, and seeds for personal use. This right does not extend to uprooting plants or harvesting from protected sites.

Always seek permission on private land and never pick from nature reserves without written consent. Foraging is a privilege that depends on our collective respect for landowners and the law.

Scottish Outdoor Access Code’s Guidance on Foraging in Scotland

      Foraging Association’s Principles of Foraging

    5. Harvest Only in Abundance

Take from plant populations that are clearly thriving. Never pick rare or isolated species, and never take more than one-third of any plant community.

Always leave enough for both the plant’s regeneration and the wildlife that depends on it.

    6. Take Only What You Need

Know your purpose before you pick.
If your recipe calls for flowers, leave the stem and leaves intact.

Avoid taking bark or roots unless truly necessary: a pruned branch will serve just as well as bark from the trunk, with less harm to the tree.

    7. Leave Pioneers and Seeders

If you encounter only a few plants of a species, let them grow and spread.
Nature rewards patience; abundance takes time.

    8. Choose Clean, Healthy Plants

Gather only from clean, vibrant, and healthy plants, in unpolluted areas. To make a healthy herbal remedy, only healthy herbs should be chosen.

Avoid herbs growing beside roads, stables, dog walking paths, or chemically sprayed fields. When home, inspect your foraged herbs carefully: keep the healthiest for internal use and use any with minor damage for housekeeping or gardening recipes.

    9. Shoreline Foraging

When foraging on the shoreline, know your tide times and ensure you cut any seaweed with a knife, rather than tearing it off which can damage the seaweed.

    10. Mind your Footsteps

Walk only where you need to, ensuring you dont trample other plants in your quest to forage. Some plants are sensitive to heavy boots and may not recover if trampled or stood on unexpectedly.

    11. Consider Wildlife

And finally, place any foraged leaves, berries or flowers in a basket in a dry spot in the garden for an hour or so to allow any insects to climb free. This allows them to move on to another habitat nearby.
